Crust
Crumb the Reduced Carbohydrate Special K and 1/3 cup of Splenda in a blender. In a glass pie pan, soften butter (you may want to use a microwave to do so). Pour crumbed Special K mixture into the melted butter. Mix and press into pie pan to form crust on bottom and sides of pan. Bake in a 350 degree oven for 8 minutes.
Filling
Place 4 large eggs, 1 1/4 cups Splenda, lime juice, and salt into blender. Add cream cheese a block at a time and blend until very smooth.
Pour filling into baked pie shell. Place on center rack of 350 degree oven and bake 60 minutes, or until slightly firm to the touch. Let cool 15-20 minutes, then refrigerate 4-6 hours before serving.
Serves 12. Each slice contains 6 grams of carbohydrates.
